Pasta with Spinach & Chicken

Prep time- 10 min
Cook time- 25 min
- 1 lbs boneless skinless chicken breast, cut into 1/2 inch strips
- 2 Tablespoons of Olive Oil
- 4 garlic cloves
- 1 medium onion chopped (about 1 cup)
- 2 cans (14.5 oz ) Diced Tomatoes with Balsamic Vinegar, Basil, and Oregano (I couldn't find this so I used the one that had basil, oregano, in it)
- 1/8 teaspoon ground nutmeg
- 1 package of fresh baby spinach
- 1 box (16oz) Mostaccioti Rigatti (i used Barrila Plus penne) cooked according to package directions, drained kept warm.
Cook chicken in a large nonstick skillet over medium heat for 5-7 min or until no longer pink. Remove; keep warm. Add oil. Saute' garlic and onion about 3 min or until onion is tender.
Stir in tomatoes and nutmeg; continue to cook about 10 min over medium heat. Add spinach and stir just until leaves have wilted.
Toss tomato- veggie mixture with chicken and pasta until well blended and heated.
