Winter Root Vegetable Soup
Ingredients :
- 4 leeks, about one inch across, with one inch of green stem. Slice diagonally one inch thick.
- Celery root, peeled and cut into pieces
- Rutabaga, peeled and cut
- 4 small turnips, peeled and cut
- 2 parsnips, peeled and cut
- 3 Yukon gold potatoes, peeled and cut
- 1 bunch carrots, peeled and cut into strips
- 1 sweet onion, cut in slices
- Celery, cut
- 2 quarts of vegetable broth
- Salt to taste
- Ground pepper
- About 1 tbsp. herbs du provence or bay leaves
Directions
1. Combine all into a large crock pot.
2. Cook on low, all day.
3. Add beans for protein, and for a heartier soup.
