Tropical Muffins
Ingredients :
- 2 cups all purpose flour
- 2 tsp. baking powder
- ½ tsp. baking soda
- 2 tbsp. and 2sp. Splenda brown sugar
- 1 sup nonfat plain yogurt
- 2 egg whites
- ¼ cup canola oil
- 1 can crushed pineapple, well drained
Directions
1. Preheat oven to 400 degrees. Line or spray muffin pan.
2. Mix dry ingredients.
3. Ina separate bowl, mix together wet ingredients.
4. Combine wet and dry ingredients. Be careful not to overmix.
5. Spoon batter into prepared pan.
6. Bake for 20-25 minutes or until golden brown. Cool before serving.
Makes 12 muffins
